She was presenting a Tiffany carving set to a long-time AIWF volunteer, and she said, "Don't use this on that awful tofu; use it on a nice, rare roast." The audience laughed...and I didn't eat tofu for 10 years! Ah, such was her influence, but you're right, Joyce. Times have changed, appetites have changed, and those of us in culinary and nutrition education need to accept this and give people what they want - permission to enjoy fantastic, flavorful food that - oh, by the way - also happens to be good for them. God bless the Mediterranean Diet!</description>
